This coffee offers an intense and evolving experience, featuring deep red fruits and floral complexity, with tassting notes of apricot; strawberry, orange and finish with tropical fruits and jasmin. A Brewers cup killer.
The Morgan Family, rooted in Volcan, Chiriqui for generations, has owned their farm for over 25 years. Seven years ago, they introduced Geisha coffee trees, nestled in a lush valley filled with tropical rainforest. A river flows through their 12-hectare property, flanked by century-old trees and cascading waterfalls teeming with wildlife.
Award-winning producer Jamison Savage, who is married to a Morgan family member, meticulously manages the farm. His careful processing techniques ensure that each lot meets the highest standards. During the drying stages, Jamison rotates the beans on multi-level drying beds to achieve exceptional flavor and clarity.
Morgan Estate exemplifies the potential of Geisha coffee when grown in harmony with its natural surroundings. It truly represents how coffee should be cultivated—balanced with nature.
The Symmetry process employs classic Carbonic Maceration, tailored for this (re)new farm, followed by a natural drying phase. This method accentuates the characteristics of expertly crafted Carbonic Maceration coffee. The cherries are pulped and then placed under pressure with CO2 to create an ideal pre-fermentation environment.
